Jussi, the hill is computer generated yes ? so it wouldent be possible to model the outrun (?, not inrun, the other part), Planica's is pretty cool (see pick)

Yes, the hills are generated functionally. Almost everything is possible but takes extra time.

Are the changes in the behaviour of ski jumper in flight (physics, body angles and control system) bigger compared to beta-2 than what was changed in beta-2 compared to the first beta? What about the take-off system? Can we expect good things?

V1.0 won't quite be available for Christmas, but I think that Santa will bring you at least a nice new screenshot.
